Today I thought I’d share another super easy (but delicious) recipe! I first shared this recipe in the early days of my blog, but not too many people saw it then, so I thought I’d post it again! As you can tell by the title, this recipe is for vegan chocolate chip cookies — my favourite! This is my recipe that I use all the time when I make cookies. I find it’s a very versatile recipe; the cookie dough can be used as the base for any type of cookie. Take out the chocolate chips and you can add anything you want! I hope you enjoy! VEGAN CHOCOLATE CHIP COOKIES
1 and 1/8 cups sifted flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable shortening
1/2 cup white sugar
1/4 cup brown sugar
1/4 cup unsweetened applesauce
1 teaspoon vanilla
3/4 cup vegan chocolate chips
Preheat oven to 350º F.
- Sift flour, baking soda, and salt together.
- Cream shortening and sugars together. Add to sifted ingredients and stir.
- Add applesauce and vanilla. Blend thoroughly.
- Add vegan chocolate chips.
- Drop teaspoon amount onto greased baking sheet. Repeat.
Bake each tray approximately 10 minutes. Makes 25 to 40 cookies (depending on size).
