Now that we’re getting into the holiday season, I’ve been getting more into baking. I recently made a vegan banana cake, so today I want to share with you my recipe. I hope you enjoy!
2 and 1/2 cups sifted flour
1 and 1/4 cups sugar
2 and 1/2 teaspoons baking powder
1/2 cup unsweetened applesauce
1/2 cup vegetable shortening
1 and 1/2 cups mashed ripe bananas (about 5 bananas)
1/2 teaspoon vanilla
Preheat oven to 375º F.
1. Sift flour, sugar, and baking powder.
2. Add applesauce, shortening, and 1/2 cup banana.
3. Beat until blended.
4. Add rest of banana and vanilla.
5. Beat for another minute.
6. Add mixture to about an 8-inch (or slightly larger) pan.
Bake approximately 35 to 40 minutes.
Add some vegan whipped cream and you’re good to go!
